Sushi Maker

Location: Dubai, AE

Operations Responsibilities

Prepare menu items and substitute and required items

Ensure proper portion, arrangement, and food garnish

Maintain food logs

Monitor the quality and quantity of food that is prepared

Identify and report excess food item

Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist

Follow all company and safety and security policies and procedures

Good knowledge of Allergens in different types of food

Prepare a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)

Prepare all types of sushi, including Maki, Nigiri and Sashimi by expertly cutting, slicing, and filleting different types of fish

Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety

Manage food prep activities

Coordinate with our staff to ensure proper cooking, considering special requests and food allergies

Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine while recommending new, modern recipes, like sushi burgers

Maintain hygiene principles in all cooking areas and clean your space at the end of the shift

Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes

Maintain a clean work environment in order to prevent food contamination

Regularly check inventory of food supplies and other products, monitor food stock and place orders

Report any issues with kitchen equipment to the manager on duty

Sterilize all utensils, instruments, and equipment used in sushi preparation before every use

Communicate with staff to ensure that special requests and food allergy considerations are met

Qualification, Experience & Skills:

Minimum Qualifications/education

High school diploma or equivalent

Minimum Experience

2+ years of related culinary experience

Experience working with high volume production

Skills

Highly organized with strong multitasking skills

Adapt in a multicultural environment

Excellent listening abilities

High attention to detail

English (Full professional proficiency - Required); Arabic is preferable
