In-depth knowledge of different types of fish and seafood, including their characteristics and seasonality.
Proficiency in various sushi-making techniques, including rolling, cutting, and shaping.
Exceptional precision in knife work for slicing and preparing fish and other ingredients.
Ability to create visually appealing, aesthetically pleasing, and well-presented sushi dishes.
Strong understanding and strict adherence to food safety and sanitation regulations, especially for handling raw fish.
Ability to work effectively under pressure in a high-volume, fast-paced kitchen environment.
Strong organizational and time management skills to handle prep work and orders efficiently.
Ability to collaborate effectively with kitchen staff, waitstaff, and management.
Clear and effective communication skills for interacting with customers and team members.
A valid food handler's permit or other relevant food safety certification.
Willingness to work evenings, weekends, and holidays, as required.
