Ensure all sushi bar operations meet restaurant standards and culinary excellence.
Supervise sushi chefs, kitchen assistants, and other team members in the sushi section.
2. Quality Control & Food Safety
Maintain the highest hygiene and food safety standards in accordance with health regulations.
Inspect and ensure freshness and quality of all fish and seafood deliveries.
Monitor portion control, temperature, and proper handling of raw ingredients.
3. Team Management & Training
Train and mentor sushi chefs and kitchen staff in proper cutting techniques, knife skills, and sushi preparation.
Schedule and manage the sushi team for efficient workflow and service.
Foster a positive, respectful, and productive kitchen environment.
4. Menu Development & Cost Management
Collaborate with management to develop new dishes and special promotions.
Control food costs through effective inventory, ordering, and waste reduction.
Work with suppliers to source premium ingredients at competitive prices.
5. Guest Interaction & Service
Engage with guests at the sushi bar, answer questions, and provide personalized dining experiences.
Ensure guest satisfaction and handle feedback professionally.
6. Administration & Reporting
Maintain accurate records of inventory, orders, and supplier invoices.
Report to the Executive Chef or Restaurant Manager on kitchen performance and needs.
Qualifications
Minimum
5-7 years of professional sushi preparation experience
, with at least
2-3 years in a leadership role
.
Formal culinary training or certification in Japanese cuisine preferred.
Deep knowledge of traditional and contemporary sushi techniques.
Excellent knife skills and attention to detail.
Strong leadership, communication, and organizational abilities.
Ability to work under pressure in a fast-paced environment.
Food handler or HACCP certification is a plus.
