Job Summary:

The Cost Controller is responsible for managing and analyzing all F&B-related costs to ensure effective cost control, profitability, and operational efficiency. The role involves working closely with procurement, kitchen, and finance teams to monitor inventory, reduce waste, and ensure compliance with budgeting and reporting standards.

Key Responsibilities:

Monitor and analyze all F&B costs and recommend cost-saving strategies. Develop and maintain accurate cost records for food, beverages, and other operational items. Perform regular inventory audits and reconciliations to ensure accuracy. Monitor wastage, portion control, and usage of raw materials. Assist in menu engineering by analyzing food cost vs. selling price. Verify supplier invoices, deliveries, and purchase requisitions against actual stock. Coordinate with purchasing and store departments to ensure cost-effective sourcing. Prepare detailed cost and variance reports for management review. Support in budgeting, forecasting, and month-end closing processes. Ensure adherence to internal controls, company policies, and health/safety regulations. Conduct regular training with operational staff on cost awareness and procedures.

Qualifications and Skills:

Bachelor's degree in Accounting, Finance, Hospitality Management, or related field. Minimum 3-5 years of experience as a Cost Controller in the F&B or hospitality industry. Strong knowledge of inventory systems, cost control procedures, and financial analysis. Proficient in Microsoft Excel, POS systems, and inventory management software. Excellent analytical, problem-solving, and communication skills. High attention to detail and ability to work under pressure.

Preferred:

Experience in a multi-outlet restaurant, hotel, or central kitchen setup. Familiarity with ERP systems or restaurant management software. Certification in Cost Control or Financial Analysis (optional but beneficial).
