(Pastry Junior Chef / Apprentice)
Position Overview:
The Commis I is the entry-level position in the pastry kitchen. This role is fundamental for learning the basics of professional pastry arts. The primary focus is on supporting the entire pastry team through preparatory work, maintaining cleanliness, and mastering fundamental techniques under close supervision. It is a role for a culinary school graduate or someone with a strong passion and minimal professional experience.
Key Responsibilities:

  • Preparation & Mise en Place:
  • Prepare basic ingredients as directed (e.g., washing fruits, zesting citrus, toasting nuts).
  • Weigh and measure ingredients accurately according to recipes.
  • Prepare simple syrups, basic sorbet bases, and par-bake items.
  • Assist in the production of bulk items like cookie dough, simple mousses, and creme patissiere.
  • Station Support:
  • Support the CDPs and DCDPs by fetching ingredients, cleaning work surfaces, and organizing their stations.
  • Learn the setup and breakdown of all pastry stations.
  • Cleaning & Maintenance:
  • Maintain impeccable cleanliness and sanitation in all work areas.
  • Wash, sanitize, and put away tools, equipment, and utensils.
  • Assist in cleaning ovens, mixers, and other large equipment.
  • Ensure proper storage and labeling of all prepared items.
  • Learning & Development:
  • Learn and adhere to all kitchen safety and hygiene standards (HACCP).
  • Master basic knife skills and proper use of pastry equipment.
  • Begin to understand the fundamentals of baking, cooking temperatures, and timing.
  • Actively observe and learn from senior chefs.
Reporting Line: Reports directly to the Demi Chef de Partie (DCDP) or Chef de Partie (CDP).
Required Skills & Qualifications:
  • A degree or diploma from a recognized culinary school is highly desirable.
  • Little to no professional pastry experience required; a strong willingness to learn is essential.
  • Basic understanding of food hygiene and safety.
  • Ability to follow instructions precisely and work as part of a team.
  • High level of energy, enthusiasm, and a positive attitude.
  • Physical stamina to stand for long periods and work in a hot, fast-paced environment.
