The Chef de Partie - Chinese Wok is responsible for managing the wok section of the kitchen, ensuring authentic Chinese flavors, consistent food quality, and efficient service. The role requires strong wok skills, speed, and knowledge of traditional and modern Chinese cooking techniques.
Key Responsibilities
Operate and manage the Chinese wok station during service
Prepare, cook, and present Chinese dishes according to restaurant standards
Ensure consistency in taste, texture, and presentation of all wok dishes
Maintain mise en place and ensure readiness for service
Follow recipes, portion control, and plating guidelines
Supervise and guide Commis Chefs or Wok Helpers assigned to the section
Ensure proper handling, storage, and rotation of food items (FIFO)
Maintain high standards of hygiene, sanitation, and food safety
Control food wastage and report shortages or quality issues
Coordinate with Sous Chef and other kitchen sections for smooth operations
Adhere to company policies, SOPs, and kitchen safety standards
Required Skills & Competencies
Strong expertise in Chinese wok cooking (stir-fry, sauces, oils, high-heat cooking)
Knowledge of Chinese ingredients, spices, and sauces
Ability to work under pressure in a fast-paced kitchen
Good knife skills and time management
Team player with basic leadership skills
Understanding of food safety and hygiene practices
Qualifications & Experience
Minimum 3-5 years of experience in Chinese cuisine, with at least 1-2 years as Chef de Partie or Senior Wok Chef
Experience in fine dining or high-volume restaurants preferred
Culinary diploma or relevant training is an advantage
