Job Summary:
We are seeking a skilled and passionate Chef de Partie (CDP) specializing in Cantonese WOK to join our dynamic kitchen team. The ideal candidate will have extensive experience in Cantonese cuisine, particularly in high-heat wok cooking, and will be responsible for preparing authentic, flavorful dishes while maintaining the highest standards of quality, hygiene, and efficiency.
Key Responsibilities: * Wok Cooking:

• Prepare and cook Cantonese dishes using traditional wok techniques (stir-frying, steaming, deep-frying, etc.) with precision and speed.
• Ensure proper heat control, seasoning, and presentation of all dishes.
• Maintain consistency in taste, texture, and portion sizes.
• Preparation & Mise en Place:

• Organize and prep ingredients (chopping, marinating, portioning) for wok station.
• Ensure freshness and quality of all ingredients, including meats, seafood, vegetables, and sauces.
• Quality & Hygiene Standards:

• Adhere to food safety and sanitation regulations (HACCP).
• Maintain a clean and organized workstation, following kitchen hygiene protocols.
• Team Collaboration:

• Work closely with the Sous Chef and other kitchen sections to ensure smooth service.
• Assist junior cooks and train commis chefs in wok techniques.
• Inventory & Waste Control:

• Monitor stock levels, report shortages, and minimize food wastage.
• Menu Development:

• Contribute ideas for new dishes or specials based on seasonal ingredients and trends.

• Experience: Minimum 3 years as a Wok Chef or CDP in a Cantonese/Chinese restaurant or high-volume kitchen.
• Skills:
• Expert in high-heat wok cooking and Cantonese cuisine.
• Strong knife skills and knowledge of traditional sauces/seasonings.
• Ability to work under pressure during peak hours.
• Education: Culinary diploma or relevant certification (preferred).
• Physical Stamina: Ability to stand for long hours and lift heavy woks/equipment.
• Team Player: Positive attitude, punctual, and able to lead a small team.
