Position Title:

Tanour & Saj Head Baker

Location: Al Majaz - Sharjah, UAE

Position Summary:

The Tanour & Saj Head Baker will lead the preparation and production of traditional Middle Eastern breads baked on Tanour and Saj. This role requires deep expertise in dough fermentation, shaping, and baking methods to deliver authentic, high-quality flatbreads while ensuring consistency, hygiene, and efficiency in daily operations.

Key Responsibilities

Oversee the production of Tanour and Saj breads (e.g., Khubz, Saj wraps, Manakish bases, and other traditional varieties). Prepare, knead, and ferment dough according to authentic recipes and bakery standards. Supervise baking processes using Tanour and Saj equipment to ensure product consistency. Train and mentor junior bakers and assistants in traditional bread-making techniques. Monitor raw material usage and coordinate with the Storekeeper for stock requirements. Ensure all breads meet quality, taste, and freshness standards before serving or packaging. Maintain compliance with Sharjah Municipality and HACCP food safety and hygiene regulations. Control production costs, minimize waste, and optimize daily schedules to meet demand. Collaborate with management to introduce new Saj/Tanour bread variations for menu expansion.

Qualifications & Requirements:

Proven experience as a Tanour or Saj baker, with specialization in Middle Eastern flatbreads. Minimum 5 years of professional bakery experience, preferably in the UAE or Middle East. Strong knowledge of dough fermentation, shaping, and baking on traditional ovens. Ability to lead, train, and motivate a production team. Familiarity with UAE food safety and hygiene regulations. Flexibility to work early mornings, evenings, weekends, and festive seasons. Basic communication skills in English; Arabic is a plus.
