Position Title: Section Head Chef - Arabic Lebanese Bread

Position Overview
We are seeking a skilled and experienced
Section Head Chef specializing in Arabic Lebanese Bread
to lead and oversee our traditional bread-making section. The ideal candidate will have extensive hands-on experience in preparing, baking, and managing authentic Lebanese breads such as
pita, markouk, saj, kaak, manakish dough, and related specialties
, while maintaining high standards of quality, consistency, and hygiene.
The role requires strong leadership, technical expertise, and a passion for preserving authenticity while optimizing production efficiency.
Key Responsibilities
Bread Production & Quality
Lead daily preparation and baking of traditional Lebanese breads.
Ensure consistent quality, texture, and authenticity of all bread products.
Oversee dough mixing, fermentation, shaping, and baking processes.
Develop new bread variations while preserving traditional methods.
Team Leadership & Training
Supervise and train bakery team members in bread-making techniques.
Assign daily tasks, monitor performance, and provide ongoing coaching.
Foster teamwork, discipline, and high performance in the bread section.
Operations & Standards
Manage ingredient usage, portion control, and waste reduction.
Ensure compliance with food safety, hygiene, and HACCP standards.
Maintain and monitor baking equipment to ensure proper functionality.
Collaborate with purchasing to secure fresh, high-quality ingredients.
Planning & Reporting
Plan production schedules based on customer orders and forecasted demand.
Control inventory of flour, yeast, and related raw materials.
Report to the Executive Chef/Head of Bakery on production performance.
Qualifications & Requirements
Minimum
5+ years of experience
in Arabic/Lebanese bread-making.
Strong expertise in traditional baking techniques (pita, saj, markouk, manakish dough, etc.).
Proven experience in a
leadership or supervisory role
within a bakery or kitchen.
Solid understanding of
food safety and hygiene regulations
.
Ability to work under pressure and manage high-volume production.
Strong communication and organizational skills.
Passion for Lebanese culinary traditions and innovation.
Preferred Skills
Experience in both
artisan and commercial-scale bread production
.
Knowledge of modern bakery equipment and production efficiency.
Creativity in developing new recipes and menu items.
Multilingual (Arabic and English preferred).
