Role Overview
The
Production Manager - Bakery
will be responsible for overseeing the entire bakery production process, ensuring that all products are produced efficiently, safely, and to the highest quality standards. This role requires strong leadership, organizational skills, and technical knowledge of bakery operations. The Production Manager will coordinate with other departments (procurement, sales, R&D, and quality assurance) to ensure smooth operations, timely delivery, and customer satisfaction while maintaining cost control and minimizing waste.
Key Responsibilities
1. Production Management
Plan, organize, and oversee daily bakery production schedules to meet business and customer demand.
Supervise the preparation, baking, and finishing of products to ensure consistency in quality, taste, and presentation.
Monitor production targets and adjust workflows to maximize efficiency.
2. Quality & Food Safety
Ensure all products meet company standards for quality and freshness.
Enforce strict hygiene and food safety practices in compliance with HACCP and local food authority regulations.
Conduct regular quality checks and implement corrective actions when needed.
3. Inventory & Cost Control
Monitor usage of raw materials and manage inventory levels effectively.
Work closely with procurement to forecast demand and avoid shortages or excess stock.
Control production costs by minimizing waste, optimizing processes, and maintaining efficient use of resources.
4. Team Leadership & Training
Lead, train, and motivate the production team to achieve operational excellence.
Develop staff skills through on-the-job training and performance coaching.
Schedule shifts and allocate tasks to ensure smooth daily operations.
5. Process Improvement & Innovation
Identify opportunities to improve production processes and increase efficiency.
Collaborate with management and R&D on developing and testing new bakery products.
Ensure the bakery stays up to date with industry trends and innovations.
6. Maintenance & Equipment
Ensure all bakery equipment is properly maintained, cleaned, and serviced.
Report and coordinate repair needs with the maintenance team to prevent downtime.
Requirements:
Proven experience in bakery production management.
Strong leadership and organizational skills.
Knowledge of bakery equipment, processes, and HACCP/food safety standards.
Ability to work under pressure and manage high-volume production.
Attention to detail and commitment to product excellence.
