Were looking for a skilled and motivated Pastry Sous Chef to support the Pastry Chef in leading the pastry team. This role is ideal for someone with strong technical ability, a passion for dessert innovation, and experience managing operations in a high-paced pastry environment.
Key Responsibilities:
xc2xb7 Assist the Pastry Chef in overseeing daily pastry production and staff supervision.
xc2xb7 Prepare and decorate desserts, cakes, and pastries to the highest standards.
xc2xb7 Help develop and test new recipes and seasonal items.
xc2xb7 Manage mise en place, stock rotation, and inventory planning.
xc2xb7 Enforce hygiene, safety, and HACCP protocols at all times.
xc2xb7 Train and guide junior pastry staff and commis to ensure consistency.
xc2xb7 Maintain high standards of cleanliness, organization, and efficiency.
xc2xb7 Take charge of the pastry section in the absence of the Pastry Chef.
Requirements
xc2xb7 Minimum 45 years of pastry kitchen experience, including at least 12 years in a supervisory role.
xc2xb7 Diploma/ Bachelors Degree in Pastry Arts, Hospitality, or a related field.
xc2xb7 HACCP Certified solid understanding of food safety regulations.
xc2xb7 Expertise in baking techniques, chocolate work, and plated dessert presentation.
xc2xb7 Strong leadership, communication, and multitasking skills.
xc2xb7 Creative, organized, and detail-oriented.
xc2xb7 Ability to perform under pressure and meet production deadlines.
