Key Responsibilities

  • Lead and manage daily operations of the Pastry and Bakery kitchen, including production planning and service execution
  • Train, supervise, and motivate the pastry and bakery team with clear task delegation and development planning
  • Conduct daily briefings and on-the-job training to maintain brand standards and culinary quality
  • Collaborate closely with the Executive Chef and Sous Chefs to align pastry operations with overall kitchen goals
  • Plan, prepare, and present high-quality pastries, desserts, breads, viennoiseries, chocolates, and baked goods
  • Develop innovative dessert concepts, seasonal menus, and signature items for outlets, banquets, and events
  • Ensure consistency in taste, presentation, portioning, and quality across all pastry offerings
  • Oversee mise-en-place, production schedules, and timely delivery for a la carte, buffet, and banquet services
  • Manage food cost control, wastage reduction, portion control, and inventory management
  • Ensure accurate requisitioning, storage, labeling, and FIFO stock rotation
  • Support menu costing, forecasting, and budgeting for the pastry department
  • Enforce strict compliance with HACCP, hygiene, and food safety standards
  • Maintain a clean, organized, and safe working environment
  • Coordinate with F and B, Banquets, and Events teams for weddings, VIP functions, and promotions
  • Uphold IHG and InterContinental brand standards and act as a role model for professionalism and leadership
Ideal Profile
  • Five to seven years of experience in pastry and bakery operations within luxury hotels or high-end hospitality
  • Two to three years of experience in a senior or supervisory pastry role
  • Formal culinary or pastry qualification preferred
  • Strong expertise in pastry, bakery, viennoiserie, chocolate, desserts, and high-volume banquet production
  • Proven leadership and team development skills
  • Solid understanding of food cost control, inventory management, and HACCP standards
  • Ability to work under pressure and manage multiple operational priorities
  • Flexibility to work shifts, weekends, and public holidays
