The Mandi Maker is responsible for preparing and cooking authentic Mandi dishes, including chicken, mutton, and mixed varieties, using traditional Arabian cooking methods. The role requires expertise in rice preparation, meat marination, spice blending, and oven (tandoor/pit) handling to deliver consistent quality and taste.
Key Responsibilities:
Prepare and cook
authentic Yemeni and Arabic-style Mandi dishes
(chicken, mutton, fish, etc.).
Manage
marination, seasoning, and spice blends
according to restaurant recipes or traditional standards.
Operate and maintain
Mandi ovens or underground tandoors
, ensuring correct temperature and cooking time.
Prepare
rice
with perfect texture, aroma, and color consistency.
Maintain
cleanliness and hygiene
of the kitchen area, utensils, and cooking equipment.
Ensure
portion control
and
food presentation
standards are met for every serving.
Monitor
food stock levels
and assist in ordering ingredients as required.
Follow all
food safety and hygiene protocols
as per UAE regulations.
Work closely with kitchen staff to ensure timely service during peak hours.
Maintain
consistency in taste and quality
of all Mandi dishes.
Requirements:
Proven experience as a
Mandi Maker / Arabic Cuisine Chef
(minimum 2-3 years preferred).
Strong knowledge of
Arabic spices, rice varieties, and traditional cooking techniques
.
Ability to handle pressure and work efficiently in a fast-paced kitchen.
Knowledge of
food safety and hygiene standards (HACCP)
.
Team player with good communication and coordination skills.
Flexibility to work shifts, weekends, and holidays.
Preferred Qualifications:
Experience in Gulf-region restaurants or Arabic cuisine kitchens.
Ability to prepare
other Arabic rice dishes
(Kabsa, Madfoon, Mazbi, etc.) is an added advantage.
