1. Quality Control During Production:
Monitor raw milk quality (fat content, SNF, microbial load, acidity).
Conduct in-line testing of products (milk, cream, yogurt, ice creamcheese, etc.) during processing.
Perform tests like pH, titratable acidity, total solids, and organoleptic evaluations.
2. Sampling and Testing:
Collect and test samples at different stages: raw milk intake, pasteurization, homogenization, and packaging.
Ensure proper documentation of test results.
3. Process Monitoring:
Monitor and verify critical control points (CCPs) as per HACCP.
Ensure proper pasteurization temperatures and holding times are maintained.
4. Compliance with Food Safety Standards:
Ensure products meet FSSAI, ISO 22000.
Support internal and external audits by maintaining records and reports.
5. Contamination Control:
Ensure hygiene and sanitation practices are followed on the production line.
6. Calibration and Maintenance of Lab Equipment:
Regularly calibrate instruments like pH meters, lactometers, butyrometers, etc.
Maintain clean and functional lab equipment.
7. Reporting and Documentation:
Maintain daily quality logs, non-conformance reports, and corrective action records.
Generate reports for the Quality Assurance Manager or Plant Head.
8. Co-ordination with Production Team:
Work closely with production supervisors to resolve quality issues.
Suggest improvements in process parameters to maintain consistency.
