. We are seeking a highly skilled and responsible individual to take on the pivotal dual role of
Kitchen In Charge / Head Grill Chef
.
This position is ideal for a chef who not only excels at high-volume, precision cooking but also possesses the leadership and organizational maturity to run the back-of-house operation independently, ensuring
strict compliance with all health, safety, and operational standards
. You will be the authority on the grill and the leader in kitchen hygiene and efficiency.
Execute our precise "smash and press" technique perfectly and consistently, handling high-fat content beef mince to achieve our signature crust and quality on every single burger.
Quality Control:
Maintain Stack & Dome's exacting standards for food quality, portion control, and presentation across all grill and prep stations.
Volume Management:
Lead the line during peak rush hours, ensuring high speed and accurate order output in a high-volume environment.
Training & Mentorship:
Train and supervise junior kitchen staff on proper cooking techniques, recipes, and station procedures.
2. Kitchen Management & Compliance
Health & Safety In Charge:
Act as the designated person responsible for maintaining
100% compliance
with all local health, hygiene, and food safety regulations.
Documentation & Reporting:
Manage and maintain all necessary daily logs (e.g., temperature checks, cleaning schedules, spoilage reports) required for internal audits and government compliance.
Inventory & Ordering:
Assist in managing inventory, minimizing waste, and ensuring proper storage and rotation of all dry-aged beef and ingredients.
Operational Excellence:
Oversee kitchen opening and closing procedures, ensuring all equipment is maintained and the kitchen is ready for the next shift.
What We're Looking For
Proven Experience:
Demonstrated experience as a lead cook, grill chef, or kitchen supervisor in a
high-volume, fast-paced setting
.
Health & Safety Certification:
Must possess a valid qualification or deep practical knowledge of
Food Safety and Hygiene Standards
(e.g., HACCP, local health authority requirements).
Detail-Oriented Mindset:
Non-negotiable ability to maintain and enforce meticulous standards for consistency, cleanliness, and process execution without constant management supervision.
Pressure Management:
Proven ability to remain calm, organized, and focused while directing staff and managing a busy grill station.
