The Indian Chinese Chef is responsible for preparing and cooking Indo-Chinese dishes while maintaining authentic flavors, consistency, hygiene, and speed of service. The role requires strong knowledge of sauces, wok cooking, and spice balance typical to Indian Chinese cuisine.
Key ResponsibilitiesCooking & Food Preparation
Prepare and cook Indo-Chinese dishes such as noodles, fried rice, Manchurian, chilli chicken, soups, momos, spring rolls, and stir-fried items.
Operate wok stations efficiently, maintaining high heat and fast cooking times.
Prepare sauces, gravies, stocks, and marinades as per standard recipes.
Ensure consistency in taste, texture, and presentation.
Mise en Place & Station Management
Prepare ingredients, chopped vegetables, sauces, and proteins before service.
Maintain an organized and clean Chinese kitchen station.
Follow portion control and recipe standards.
Quality, Hygiene & Safety
Adhere to food safety, hygiene, and sanitation standards (HACCP or local authority guidelines).
Ensure proper storage and labeling of raw and cooked food.
Monitor freshness and quality of ingredients.
Maintain cleanliness of wok, burners, and kitchen equipment.
Inventory & Cost Control
Assist in monitoring stock levels of sauces, noodles, vegetables, and proteins.
Minimize food wastage and follow cost-control practices.
Inform supervisors of low stock or quality issues.
Team Coordination
Work closely with other chefs and service staff during busy hours.
Follow instructions from the Head Chef or Kitchen Manager.
Assist in training junior kitchen staff when required.
Skills & Requirements
Proven experience as an Indian Chinese / Indo-Chinese Chef.
Strong knowledge of wok cooking and Chinese sauces.
Understanding of Indo-Chinese flavor profiles and spice balance.
Ability to work in a fast-paced, high-pressure kitchen.
Physically fit to stand for long hours.
Good teamwork and communication skills.
Preferred Qualifications
Culinary diploma or relevant kitchen training.
Experience in Indian street-style or restaurant-style Chinese cuisine.
HACCP or food safety certification.
Working Conditions
Shift-based role including weekends and holidays.
Exposure to high heat, flames, and standing for extended periods.
