Job Overview - Health, Safety, and HACCP Compliance
As the Hygiene and Safety Officer, you will be responsible for implementing, monitoring, and training staff on all food safety and occupational health protocols in accordance with Accor standards and UAE legislation. You'll work closely with kitchen, stewarding, and security departments to maintain best practices in hygiene, chemical use, and workplace safety. This role also requires regular liaison with Dubai Municipality to ensure external compliance and readiness for inspections.
What You'll Do

• Monitor compliance with Dubai Municipality health codes and Accor hygiene standards
• Ensure all chemicals are safely labeled, stored, and recorded in compliance files
• Work with stewarding and kitchen teams to maintain cleanliness and food handling protocols
• Coordinate with security and medical staff on occupational health card compliance and incident prevention
• Conduct hygiene and safety training sessions for food handlers and related staff
• Organize monthly and annual food safety and safety audits, maintaining all reports and follow-ups
• Maintain up-to-date training records, manuals, and HACCP certifications across departments
• Serve as the primary contact with local health authorities and attend official inspections
• Communicate updates in hygiene laws and standards to the leadership team
• Support development of departmental trainers and reinforce safety awareness at all levels
• Assist with food safety sections of operational manuals and employee SOPs
• Promote a positive and proactive safety culture across hotel operations
• Enforce proper grooming, hygiene, and safety behavior throughout departments

Ideal Profile - Food Safety and Occupational Health Expertise

• HACCP certification is mandatory; additional municipality approvals preferred
• 2-4 years experience in hygiene and safety management, preferably in hospitality or F&B
• Strong knowledge of UAE health and safety regulations
• Experience organizing and conducting training programs
• Fluent in English; Arabic is a plus
• Proficient in documentation, reporting, and compliance tracking
• Professional demeanor with high attention to detail and policy enforcement
• Collaborative team player capable of working across departments and levels
• Flexible and adaptable to hotel needs and shifting priorities
