As the Head Butcher your responsibility will oversee all aspects of the meat preparation and butchery operations. Success in this role will be determined by your ability to ensure the quality, freshness and presentation of meat products to be used for the meals. Duties and responsibilities
Source and select high-quality meats from trusted suppliers while considering cost and availability.
Manage inventory to ensure an adequate supply of meats while minimizing wastage and spoilage.
Monitor and control the storage conditions (temperature, hygiene) of meat products to maintain freshness, prevent contamination, and prevent spoilage.
Ensure compliance with all food safety regulations, including HACCP and DM guidelines
Expertly break down whole carcasses into various cuts, ensuring accuracy and precision.
Employ proper knife techniques and utilize appropriate tools to trim, portions, and debone meat
Conduct regular inspections of equipment, refrigeration systems, and work areas to maintain cleanliness and prevent hazards.
Train and manage the Butchaty team.
Work experience
Proven 10-12 years of work experience (U.A.E) as a Head Butcher or similar position in a Restaurant or Hotel environment.
Educational qualifications
High school education or a Diploma in culinary is required.
Culinary certificate from a recognized institution will be an added advantage.
