Jumeirah Zabeel Saray is a luxurious beachside resort located on the west crescent of the iconic Palm Jumeirah in Dubai. The interior of the resort is inspired by the ancient palaces of Turkey and features hand-painted finishings, Turkish artworks and stunning murals inspired by the Golden Age of the Ottoman Empire. The resort offers 405 rooms and suites, 38 Royal Residences and the award-winning Talise Ottoman Spa, one of the largest and most luxurious spas in the Middle East. About the Job

An opportunity has arisen as General Manager (Zenzi Beach) - Food and Beverage to join the team at Jumeirah Zabeel Saray. The main duties and responsibilities of this role:

The Ideal candidate will demonstrate an infectious energy for exceptional customer service and a passion for the Food & Beverage industry by:

Operational
  • Maintains standards to ensure that the customer experience is efficient, effective and hospitable.
  • The GM has overall responsibility of all aspects of the customer service, front and back of house.
  • The General Manager must fully understand and appreciate the different sections in the kitchen and the kitchen hierarchy. The GM must be fully conversant with the current suppliers, ordering process, time scales to delivery and shelf life of all products. The GM must have a technical understanding of the recipe costing, GP figures and menu planning and development.
  • As the most senior brand ambassador the GM must be fully versed in the brand standards and ensure that all colleagues are aware and also maintain these standards.
  • Must ensure that all daily, weekly and monthly paperwork is completed and filed/forwarded correctly. Must ensure that all colleagues have attained and retained the correct knowledge to complete the paperwork required for their station.
  • Is fully responsible and accountable for ensuring that all monies are safe guarded at all times and that all paper work is completed in accordance with company policy.
  • Ensures that all cash handlers have received the required training and follow the correct procedures for handling money.
  • Has exposure and understanding of HD business margins and the effects on overall profit.
  • Expected to sign off and approve any orders. To ensure that all orders are in line with the budget and stock requirements. The GM must ensure that colleagues who are authorized to place orders followed the correct procedures.
  • Completes all forecasting for daily, weekly and monthly for both revenue and products.
  • Drives the use of these tools to a high standard.
  • Ensures that all rosters are in line with budget and business requirements and completed in time
  • Ensures that all maintenance issues are rectified as soon as possible by taking responsibility for any quotes required.
  • Fully supports the Chef de Cuisine, Sous Chef or Head Chef with managing the kitchen team and operations.
  • The GM must be fully conversant with the local laws and customs regarding the serving of alcohol and in particular the variations regarding the license under which his/her restaurant operates. He must also ensure that all staff under the GM\'s leadership are aware of these laws and license requirements and practice responsible service of alcohol.
  • The GM will lead the team in food tastings, cocktail and wine list development and any other matters relating to the food and beverage offer. The GM will be tasked to ensure that the food and beverage offer maintains the brand standard.
  • Regularly sets targets and ensure the team are capable and incentivised to achieve these targets.
  • Ensures that all complaints are dealt with correctly and in a timely manner. Communicates any issues immediately to Operations Manager or Director of Operations.
  • Has full control of a shift and ensures all brand standards are adhered to at all times.
  • Deals with all problems in an effective manner and ensures that the business or colleagues are not negatively affected.
HR/Training
  • GM must ensure that all colleagues have the correct knowledge required of their station by means of regular assessments, appraisals and on-going training.
  • Ensures that all vacation planning is completed, updated and in line with business requirements. Right people; right place/time.
  • Has a good understanding on the importance for benefits of training for the development of the colleagues.
  • The GM must ensure that relevant and stimulating training is part of all colleague work life and must undertake that all training is completed and recorded correctly.
  • The GM is to ensure the development and growth of colleagues and be fully involved in overseeing the recruitment of all new colleagues, setting KPI\'s, maintaining training calendars, conducting and overseeing appraisals and providing regular feedback and coaching for all staff in the restaurant. IDP\'s must be implemented by the GM for all colleagues.
  • The GM works closely with the HR Department at all times. Is fully involved with the recruitment process; actively scouting for talent and finding contacts to build talent pools.
  • Ensures all probationary and appraisals are conducted correctly and in time and all correct paper work submitted.
  • The GM must be fully conversant with the wage costs and margins of flexibility within the team under the GM\'s leadership. The GM must monitor and control these costs at all times.
  • Supports and promotes a culture of engagement at all times. Respects all colleagues and actively try\'s to build a team culture.
  • Is a positive role model to their team. Continuously motivates and develops colleagues to achieve results.
  • Ensures that all rosters are in line with budget and business requirements and completed in time.
Marketing/Outlet development
  • Has a complete understanding of their customer and their needs.
  • Is actively involved in producing sales building plans, marketing and developing relationships with 3rd parties.
  • Has the ability to analyses trends and understands the strategy.
Health & Safety
  • The GM will be fully responsible for all H&S in the restaurant.
  • The GM must ensure that all H&S guidelines are maintained and regular audits on H&S and Fire Safety are in place and that all recommendations put forward by said audits are acted on in a timely manner. And that all staff should be aware of and trained on their individual responsibilities.
  • Is fully responsible and accountable for ensuring that the whole outlet including the kitchen operates in accordance to local health and hygiene legislations.
Communication
  • Has excellent written and verbal skills including the ability to write and present reports on the business on monthly bases.
  • Has the ability and confidence to communicate upwards, is active in meeting and contributes in a positive manner.
  • Has the ability to lead and influence discussions and encourages a two way communication process with the team.

About You

The ideal candidate for this position will have the following experience and qualifications:
  • Minimum 2 - 5 years\' experience at General Manager level (or equivalent).
  • At least 2 years in a similar leadership role.
  • Ideally experience in an international cuisine restaurant within a luxury 5-star environment is desirable.
  • A strong understanding of financials is essential as well as the ability to operate within the policies, procedures, and systems of Jumeirah.
  • Internationally recognized Degree or Diploma
