The Food Safety & Hygiene Officer is responsible for ensuring the effective implementation, monitoring and continual improvement of food safety, hygiene and sanitation system across Al Safadi Restaurants and the Central Production Unit. The role ensures compliance with Dubai Municipality regulations, standards, and certification requirements (HACCP & FSSC 22000). The Officer work closely with chefs, production staff, restaurant managers and the QA team to embed a strong food safety culture across the organization.
Key Responsibilities:
1. Compliance & Certification
Ensure restaurants maintain compliance with HACCP certification.
Support CPU in establishing and maintaining FSSC 22000 standards.
Prepare documentation, support audits, and close non-conformities.
2. Food Safety Monitoring
Verify Critical Control Points (CCPs) and monitoring records.
Conduct routine inspections of preparation, storage, and service areas.
Monitor temperature control, cooking, cooling, and storage practices.
Review and maintain sanitation, calibration, pest control, and hygiene logs.
3. Hygiene & Sanitation Oversight
Supervise cleaning and sanitation schedules across all sites.
Monitor waste handling and disposal as per municipal standards.
Verify personal hygiene practices of staff (handwashing, PPE, grooming).
4. Training & Awareness
Deliver training on food safety and hygiene.
Train staff on allergen control, cross-contamination, and GMP practices.
Promote a strong food safety culture through campaigns and coaching.
5. Documentation & Records
Maintain and update HACCP & FSSC documentation (SOPs, monitoring sheets, audit forms).
Archive food safety records to ensure traceability.
Prepare monthly compliance and incident reports for the QA Manager.
6. Audits & Inspections
Conduct internal food safety audits at restaurants and CPU.
Assist during external audits, certification visits, and Dubai Municipality inspections.
Verify supplier audits and ensure raw materials meet standards.
7. Incident & Crisis Management
Investigate food safety incidents and customer complaints.
Implement corrective actions and report findings to QA Manager.
Participate in emergency preparedness (recalls, contamination, etc ).
8. Allergen & Cross-Contamination Control
Implement allergen management across CPU and restaurants.
Verify allergen labelling and segregation of ingredients.
Train staff on allergen handling and customer communication.
9. Coordination & Communication
Liaise with chefs, managers, and operations teams to align food safety goals.
Communicate audit results, compliance status, and incident reports to QA Manager.
Represent Al Safadi during external audits and inspections
Key Qualifications:
Bachelor's degree in Food Science, Food Technology, or Microbiology.
Minimum 3-5 years of experience in food safety and hygiene within hospitality or food production.
In-depth knowledge of HACCP, ISO 22000, FSSC 22000, and UAE food safety regulations.
Excellent communication, auditing, and training skills.
Willingness to travel between restaurants and the central production unit (CPU)
Must hold a valid UAE driving license
Adaptable and proactive.
Ability to multitask and work under pressure in a fast-paced environment.
