The Commis I Chef is responsible for preparing consistent, high-quality food while providing courteous, professional, and efficient service in line with the Club's operational standards. This role requires hands-on experience in both butchery and sushi preparation.
Job Responsibilities
Butchery Duties
Break down, trim, and portion meat, poultry, and seafood according to standards.
Ensure proper storage, labeling, and rotation of all butchery products (FIFO).
Maintain cleanliness and sanitation of butchery tools, equipment, and work areas.
Monitor and report meat quality and freshness.
Assist with inventory and stock checks related to butchery.
Sushi Duties
Prepare sushi ingredients including rice, vegetables, fish, and condiments.
Assist in rolling maki, preparing nigiri, sashimi, and other traditional sushi items.
Ensure consistent portioning and presentation of sushi.
Maintain cleanliness and organization of the sushi station throughout service.
Ensure proper cold chain and freshness of all raw seafood.
General Kitchen Duties
Follow all hygiene, food safety, and HACCP guidelines.
Support the team during mise-en-place and service.
Minimize food waste and adhere to portion control standards.
Perform other duties as assigned by kitchen leadership.
Qualifications
Culinary diploma or relevant certification preferred.
1-2 years of experience in butchery or sushi preparation (both preferred).
Proficient knife skills and understanding of raw food safety.
Familiarity with Japanese ingredients and sushi techniques.
Strong attention to detail, cleanliness, and kitchen organization.
Ability to perform under pressure in a fast-paced kitchen environment.
Excellent teamwork and communication skills.
Physical Requirements
Ability to stand for extended periods.
Comfortable handling raw meats and seafood.
Able to lift up to 25 kg.
Manual dexterity and precision in knife work.
