Job Description

POSITION PURPOSE
To ensure the smooth and effective running of day to day Goods Receiving and stores operation of cluster properties. To assist Food & Beverage department to achieve budgeted Food & Beverage Costs. Manage all aspects of Inventory and cost control function within cluster properties and provide training when required. ESSENTIAL FUNCTIONS

  • Conduct month-end food and beverage inventories for Stores & Outlets.
  • Prepare Daily Flash Food & Beverage Report.
  • Doing spot checks for F&B outlets & Spa as per policy.
  • Create/update recipes (food, beverage, special costing) and link Micros to Inventory system.
  • Ensure proper issuance for F&B items from the Store.
  • Ensure store items are checked regularly on expiry and freshness.
  • Reduce spoilage by monitoring and using better stock movement.
  • Attend specific banquet function if necessary to spot check stocks.
  • Monitor all policy & procedure to ensure compliance.
  • Highlight any potential challenges or opportunities to improve profitability to management.
  • Conduct trainings for F&B with the help of KIT (local Micros-Opera vendor).
  • Maintain a close working relationship with the F&B Manager, Executive Chef, and Purchasing Manager and make them aware of any potential problems or opportunities and improve the controls in their areas as they relate to F&B.
  • To perform any other duties that may be assigned from time to time by management.
  • Check menu costing for Food & Beverage and verify it with pricing policy
  • Prepare monthly F&B cost report and month-end reconciliation reports
Control Procedures
  • Introduce and monitor par stock levels in all Beverage outlets (excluding Banquets) in line with policy and procedures.
  • Provide F & B Manager with suggestions for future price structuring of menus, utilizing knowledge of current trends and unit prices.
Control user access within Procurement and Inventory system through system security.
To laisse with purchasing department on any supply or pricing issues.
Staffing Procedures
  • Attend monthly Food & Beverage meetings and other business related meetings.
  • Ensure compliance with all health, safety and hygiene legislation.
  • Control monthly payroll and staff requirements in line with business
SPECIFIC JOB KNOWLEDGE, SKILLS AND ABILITIES
  • Work experience in food & beverage department.
  • Significant experience of Excel and Microsoft Dynamics system.
  • P.O.S. experience - Micros preferred
  • Leadership Success Profile competencies
  • Should have knowledge of financial reports used within hotel environment
  • Should demonstrate assertiveness to implement audit policies and procedures within Food & Beverage department
  • Be able to communicate clearly and develop relationships with all levels of staff and management
  • Good product knowledge of meat, fish and fresh produce as well as beverages
  • Ability to deal effectively with internal and external customers
  • Strong analytical skills.
