Job Description

Scope and General Purpose To ensure that operating equipment, food processing facilities, storage rooms, walk in fridges, immediate corridors holding areas and other assigned areas are always in clean hygienic condition as per the standard laid out. 1. Specific Duties and Responsibilities: 1.1 To oversee and direct all aspects of the stewarding operations 1.2 To provide functional assistance and direction to the stewarding operation. 1.3 To coordinate functions and activities with other department heads as assigned. 1.4 To supervise the functions of all stewarding department employees, facilities, operation and costs. 1.5 To control an on-going basis: quality levels of product and services, operating costs and sanitation, cleanliness and hygiene. 1.6 To establish and maintain such systems, methods and operations which are necessary to supply all outlets and production areas with clean, correct and timely mis-en-place and minimizes cost through breakages, loss and excessive usage and appropriate staff levels. 1.7 To establish and maintain effective employee relations. 1.8 To conduct under the guidance of the Stewarding Manager such functions as hiring specific levels of employees, employee orientations, on the job performance appraisal, training, suspension and if necessary he ensures appropriate staffing and productivity. 1.9 To develop formal training plans and conducts on the job training sessions for the stewarding department staff. 1.10 To coordinate with the Stewarding Manager in establishing minimum and maximum operating par stocks and supplies and approves storeroom requisition. 1.11 To attend and contribute to the weekly Food & Beverage meeting. 1.12 To keep up to date records which includes the following : Costs, breakage and Par Stock 1.13 To develop and implement the hotel sanitation checklist and takes corrective actions required. 1.14 To conduct all administrative work required, including the following: 1.14.1 Attendance records 1.14.2 Duty schedule 1.14.3 File on casual employees 1.14.4 Health inspections record 1.15 To ensure the cleanliness of all facilities and equipment. 1.16 To schedule preventative maintenance work and coordinates with Engineering. 1.17 To perform related duties and special projects as assigned. 2. General Responsibilities 2.1 To promote efficiency, confidence, courtesy and an extremely high standard of social skills. 2.2 To generally promote and ensure good inter-departmental relations. 2.3 To display a pleasant manner and positive attitude at all times and to promote a good company image to guests and colleagues. 2.4 To demonstrate pride in the workplace and personal appearance at all times when representing the hotel thus identifying a high level of commitment. 2.5 To adhere to Company and Hotel rules and regulations at all times. 3. Occasional Responsibilities 3.1 To report any equipment failures/problems to the Maintenance Department. 3.2 To pass any maintenance requests to the Maintenance Department. 3.3 To participate in any Training/Developments schemes as recommended by senior management. 3.4 To assist the Duty Manager in any task outlined/detailed by him/her. 3.5 To comply with any reasonable request made by management to the best of your ability. 4. Legal Responsibilities 4.1 Ensure that the standards required by Law and by Management are maintained at all times in the areas specified above. Job Types: Contract, Permanent, Full-time
