. The CDP will be responsible for managing a specific kitchen section, ensuring consistent quality, authentic flavors, and presentation of Japanese dishes in line with SLRP's standards.
Key Responsibilities:
Prepare and cook high-quality Japanese dishes such as sushi, sashimi, ramen, tempura, donburi, and other specialty items.
Supervise and support Demi Chefs and Commis Chefs in daily kitchen operations.
Ensure consistency, portion control, and presentation in all dishes served.
Maintain mise en place and ensure all ingredients are prepped, stored, and rotated properly.
Monitor and maintain hygiene, safety, and sanitation standards (HACCP compliance).
Work closely with the Sous Chef and Head Chef to develop new Japanese menu items and seasonal specials.
Control wastage and manage stock levels efficiently.
Ensure all kitchen equipment and tools are handled properly and maintained in good condition.
Lead by example with professionalism, teamwork, and a commitment to quality.
Qualifications & Experience:
Minimum
3-5 years of kitchen experience
, including at least
2 years in a Japanese or Asian cuisine restaurant
.
Strong knowledge of Japanese cooking techniques, ingredients, and flavor profiles.
Diploma or certification in Culinary Arts or a related field preferred.
Excellent leadership, organization, and multitasking skills.
Good communication skills and the ability to work under pressure.
A passion for Japanese cuisine and continuous improvement.
