. The DCDP will assist the Chef de Partie in preparing and presenting authentic Japanese dishes, ensuring consistent quality, taste, and presentation that meet SLRP's culinary standards.
Key Responsibilities:
Prepare, cook, and present a variety of Japanese dishes including sushi, sashimi, ramen, donburi, tempura, and other traditional items.
Support the Chef de Partie in daily kitchen operations, including mise en place, cooking, and plating.
Maintain high standards of food quality, taste, and presentation at all times.
Ensure all dishes are prepared according to recipes and portion control guidelines.
Maintain cleanliness and organization of the workstation in line with hygiene and safety standards (HACCP).
Monitor stock levels and report shortages to the Chef de Partie.
Assist in training and supervising Commis Chefs and kitchen helpers.
Collaborate with the team to improve efficiency, minimize waste, and enhance customer satisfaction.
Ensure proper storage, labeling, and rotation of all ingredients and prepared items.
Qualifications & Experience:
Minimum
2-3 years of kitchen experience
, including at least
1 year in Japanese or Asian cuisine
.
Strong understanding of Japanese culinary techniques and ingredients.
Diploma or certification in Culinary Arts or related field preferred.
Excellent knife skills and attention to detail.
Team player with a positive attitude and passion for Japanese food.
Ability to work under pressure and follow instructions accurately.
Flexible with working hours, including weekends and holidays.
