The Chef de Partie - Butcher is responsible for the preparation, breakdown, and portioning of all meat, poultry, and game products in accordance with kitchen standards. This role ensures the highest quality, consistency, and food safety while supporting menu execution and kitchen efficiency.
Key Responsibilities
Receive, inspect, and store meat and poultry deliveries to ensure quality and freshness
Break down whole carcasses, primal cuts, and poultry efficiently with minimal waste
Portion, trim, and prepare meats according to menu specifications and yield standards
Prepare sausages, cured meats, marinades, and stocks as required
Ensure correct labeling, rotation (FIFO), and storage of all butchered products
Maintain high standards of hygiene, cleanliness, and food safety (HACCP)
Control food costs by maximizing yield and minimizing waste
Support service during peak periods when required
Train and guide commis chefs or apprentices assigned to the butcher section
Maintain butcher tools and equipment in safe working condition
Follow all health, safety, and company policies

Pay: QAR3,000.00 - QAR4,000.00 per month
