Responsibilities

• Prepare and portion a variety of meats, including beef, pork, poultry, and game, according to the restaurant's specifications and high standards.
• Collaborate with the executive chef and culinary team to develop meat-based dishes and contribute to the overall menu strategy.
• Oversee the daily butchery operations, ensuring efficient workflows and maintaining high standards of cleanliness and safety.
• Manage inventory levels of meats and supplies, placing orders as necessary while monitoring quality and freshness.
• Stay updated on industry trends and innovation in butchery practices, ensuring adherence to best practices.
• Train and mentor junior kitchen staff in proper butchering techniques and meat preparation.
• Uphold the highest levels of food safety and hygiene standards within the butchery area.

Requirements:

• Minimum of 3 years of experience as a Chef De Partie or similar role specializing in butchery.
• Culinary school diploma or relevant qualifications in butchery and meat preparation.
• Proven experience in high-end or luxury establishments is preferred.
• Strong knowledge of various butchering techniques and cuts of meat.
• Ability to work efficiently in a fast-paced environment with high attention to detail.
• Excellent organizational and time management skills.
• Flexibility to work varied shifts, including weekends and holidays.
