The Chef de Partie - Sushi is responsible for leading the sushi section, ensuring high standards of preparation, presentation, and food safety. This role requires expertise in sushi-making, strong knife skills, and the ability to manage junior chefs while maintaining consistency and creativity.
Key Responsibilities:
Prepare, craft, and present sushi items (nigiri, sashimi, maki, rolls, etc.) with precision and creativity.
Supervise and guide Demi CDPs and Commis within the sushi section.
Ensure proper handling, storage, and quality control of fish and other sushi ingredients.
Maintain consistency in taste, portioning, and presentation in line with restaurant standards.
Monitor stock levels, assist in ordering, and minimize wastage.
Uphold food safety, hygiene, and sanitation standards (HACCP compliance).
Work closely with the Sous Chef/Head Chef to develop new sushi menu items.
Ensure smooth operations during service, especially during peak hours.
Requirements:
Proven experience as a CDP or strong DCDP in sushi preparation (minimum 3-5 years).
In-depth knowledge of Japanese cuisine, fish selection, and sushi techniques.
Excellent knife handling and plating skills.
Leadership qualities with the ability to train and mentor junior chefs.
Strong organizational and time-management skills.
Ability to work under pressure while maintaining quality.
