The Accountant & F&B Controller is responsible for managing all financial transactions, controlling food & beverage costs, monitoring inventory, and ensuring accurate reporting for the restaurant. This role plays a key part in maintaining profitability through effective cost control, analysis, and financial compliance.
Key Responsibilities
Accounting Responsibilities
Financial Transactions & Reporting
Maintain accurate books of accounts (AP, AR, GL, petty cash).
Prepare daily, weekly, and monthly financial reports.
Manage daily sales reconciliation and bank deposits.
Process and record supplier invoices, credit notes, and payments.
Prepare monthly closing for P&L, balance sheet, and cash flow.
Assist with annual audits and ensure compliance with UAE regulations & VAT laws.
Maintain proper documentation for expenses and payments.
Payroll & HR Coordination
Prepare monthly payroll summary and overtime calculation.
Maintain records of leaves, attendance, and staff settlements.
Support in preparing EOS (gratuity) and final settlements.
Cash & Cost Controls
Monitor cash handling procedures and POS variances.
Reconcile petty cash and maintain supporting documents.
F&B Control Responsibilities
Inventory & Costing
Conduct weekly & monthly inventory counts for F&B and consumables.
Update inventory reports and investigate variances.
Monitor wastage, spoilage, staff meals, and complimentary items.
Ensure proper recipe costing and menu engineering.
Maintain master data for recipes, portion sizes, and yield tests.
Purchasing & Supplier Coordination
Review daily purchase requests and verify pricing.
Coordinate with suppliers for quotations and compare pricing.
Ensure purchases align with approved budgets and cost targets.
Verify receiving reports and match with purchase orders and invoices.
Operational Controls
Monitor food cost %, beverage cost %, and COGS trends.
Ensure all transfers (kitchen-bar, kitchen-store) are properly recorded.
Review production sheets, consumption reports, and item-wise profitability.
Identify areas for cost reduction and operational efficiency.
Core Competencies & Skills
Strong knowledge of accounting principles and VAT.
Experience in F&B cost control and inventory management.
Proficiency in POS systems, inventory software, and MS Excel.
Attention to detail, accuracy, and strong analytical skills.
Ability to work under pressure and meet deadlines.
Understanding of restaurant operations and menu costing.
Qualifications
Bachelor's degree in Accounting, Finance, or related field.
Minimum 2-4 years of experience in restaurant accounting or F&B control.
Knowledge of UAE market and hospitality standards (preferred).
Experience with systems like QuickBooks, Zoho, Oracle, or similar.
Key Performance Indicators (KPIs)
Accurate month-end reporting.
Controlled food & beverage cost within budget.
Reduction in wastage and inventory variances.
Timely payroll and vendor payments.
Compliance with internal controls and finance policies.
