Job Description

Key Responsibilities:

Prepare, bake, and decorate all Western desserts--including cakes, pastries, tarts, mousses, cookies, and specialty sweets. Develop and innovate new Western dessert menu items while maintaining consistency and quality. Ensure all desserts meet the restaurant/hotel's standards for taste, presentation, and portion size. Monitor and maintain stock levels of pastry ingredients; assist with inventory and ordering. Ensure proper storage, handling, and rotation of all ingredients to minimize waste. Decorate desserts with Western techniques (e.g., glazing, piping, chocolate work, sugar decorations). Maintain cleanliness and hygiene within the pastry section, following HACCP and safety protocols. Coordinate with the Executive Chef/Sous Chef to plan menus, seasonal offerings, and special event desserts. Train and guide junior staff and commis pastry chefs. Ensure timely production during service hours and special events. Conduct quality checks on all products before service.

Skills & Qualifications:

Proven experience as a Pastry Chef, Western Dessert Chef, or similar role. Strong knowledge of Western pastry techniques: baking, chocolate work, doughs, creams, glazes, and plating. Creativity and an eye for detail in dessert design and presentation. Knowledge of global Western dessert trends and modern pastry styles. Ability to follow recipes accurately and maintain consistency. Excellent time-management and organizational skills. Ability to work under pressure during peak hours. Culinary or pastry degree/certification (preferred). Knowledge of food safety standards and HACCP.
