Job Description

A sushi chef prepares and presents sushi and sashimi dishes, which includes slicing fish, making sushi rolls, and cooking rice. Key duties involve ensuring ingredient quality and freshness, maintaining a clean and safe workspace according to health codes, and managing inventory. They are also responsible for menu development, training staff, and sometimes providing direct customer service.

Core responsibilities



Dish preparation:

Crafting a variety of sushi, sashimi, and other Japanese dishes following established recipes and techniques. This includes expert knife skills for slicing fish and precise rolling for sushi.

Ingredient management:

Selecting and inspecting fresh ingredients like fish, seafood, and produce, and managing food stock to minimize waste.

Quality and presentation:

Ensuring all dishes meet the restaurant's quality and presentation standards and are visually appealing.

Hygiene and safety:

Maintaining a clean and organized sushi bar and kitchen area, adhering strictly to health and safety regulations.

Menu and creativity:

Developing new and original menu items and specials, sometimes in collaboration with management.

Customer interaction:

Interacting with customers to take orders, accommodate special requests, and personalize their experience, especially at a sushi bar.
