Responsible for preparing and presenting sushi and sashimi dishes to customers in a restaurant or sushi bar. They must ensure the quality, taste, and presentation of the food meets or exceeds customer expectations. KEY RESPONSIBILITIES: Sushi Preparation: Expertly handle and prepare various types of fish and seafood for sushi and sashimi. Create sushi rice and prepare other ingredients such as vegetables, sauces, and seasonings. Sushi Rolling and Assembly: Craft different types of sushi rolls, including Nigiri, Sashimi, Maki, and special rolls. Pay close attention to detail in assembling rolls for a visually appealing presentation. Knife Skills: Possess exceptional knife skills to slice fish and seafood with precision and consistency. Quality Control: Maintain strict quality control standards for freshness and taste of ingredients. Ensure food safety and hygiene standards are met during food preparation. Menu Development: Collaborate with the head chef to create and refine the sushi menu, including specials and seasonal dishes. Inventory Management: Monitor and control inventory of sushi ingredients, ensuring they are adequately stocked and minimizing waste. Kitchen Organization: Keep the sushi bar and kitchen area clean, organized, and well-maintained. Maintain equipment and utensils in good working condition. EDUCATION/TRAINING: Proven experience for 1-2 years as a sushi chef in a reputable sushi restaurant. SKILLS & ABILITIES:

• Knowledge of Japanese culinary techniques and traditional sushi preparation methods.
• Strong knife skills and attention to detail.
• Familiarity with seafood handling and sourcing.
• Food safety and hygiene certification may be required.
• Creativity in developing new sushi dishes and menu items is a plus.
