We are looking for a highly skilled and creative
Sushi Chef
with a strong background in
authentic Japanese cuisine
to join our restaurant and lounge team. The ideal candidate will have expertise in
sushi, sashimi, maki, nigiri, omakase-style preparation, and modern Japanese plating
, with strong knowledge of product quality and freshness standards.
You will be responsible for
preparation, presentation, hygiene, stock control, and guest interaction at the sushi counter
.
Key Responsibilities
Prepare and present
sushi, sashimi, nigiri, maki, temaki and specialty rolls
Maintain highest standards of
freshness, knife work, and food safety
Ensure consistency in taste, portioning, and presentation
Handle
cutting, filleting and storage of fish and seafood
Manage sushi counter mise-en-place and daily preparation
Monitor stock levels, ordering, and wastage control
Interact with guests at the sushi bar where required
Follow
HACCP and food hygiene standards
at all times
Assist Head Chef in menu development and new roll creations
Work efficiently during peak service in high-volume venues
Requirements
Minimum
3-5 years experience
as Sushi Chef or Japanese Cuisine Chef
Strong knowledge of:
Sushi and sashimi preparation
Japanese ingredients and sauces
Knife skills and cutting techniques
Experience in
fine dining, sushi bar, or lounge concepts
Understanding of product quality, seafood handling, and temperature control
Ability to work in fast-paced environment
UAE / GCC experience preferred
English required (Japanese language is an advantage)
Preferred Background
Omakase or chef-table experience
Experience in
fusion sushi & modern presentation styles
Pre-opening restaurant experience
Knowledge of Japanese hot kitchen items (ramen, robata, tempura) is a plus
