Stewarding Operations
Oversee all stewarding areas, including dishwashing, pot washing, and kitchen cleaning schedules
Ensure cleaning routines and sanitation standards are consistently maintained across all kitchens
Monitor the maintenance and performance of stewarding equipment, working closely with Engineering for preventive upkeep
Manage the stewarding team's daily duties, rosters, and training needs
Monitor and control breakage, chemical usage, and inventory of cleaning supplies
Hygiene Management & Compliance
Implement and monitor HACCP guidelines and ensure full compliance with local health regulations
Conduct regular hygiene audits across kitchen, storage, and back-of-house areas
