The role requires strong leadership, excellent technical skills, and the ability to train and guide multiple teams while upholding the Reif Kushiyaki identity of refined, ingredient-focused Japanese cuisine.
Key Responsibilities
Sushi Leadership & Team Management
Lead and manage the
entire sushi team
across all Reif Kushiyaki brands/outlets.
Assign daily tasks, define priorities, and ensure all sushi chefs follow brand standards.
Conduct regular training sessions to maintain consistency in cutting techniques, product handling, and plating standards.
Mentor and develop sushi chefs and commis to ensure continuous skill improvement.
Provide feedback, performance updates, and recommendations for staffing needs.
Standards & Quality Control
Ensure all sushi dishes meet Reif Kushiyaki's signature standards of taste, presentation, and quality.
Strictly monitor product freshness, portion sizes, and ingredient handling.
Conduct regular quality checks across outlets to ensure consistent execution.
Uphold the brand philosophy of simplicity, precision, and ingredient respect in every dish.
Operational Oversight
Oversee daily mise-en-place planning and ensure proper preparation across all sushi counters.
Coordinate with purchasing and outlet teams to ensure proper stock levels of fish, rice, and essential sushi ingredients.
Monitor equipment conditions and ensure proper maintenance of sushi knives, tools, and bar setup.
Support menu changes, seasonal items, and development of new sushi items aligned with the brand.
Food Safety & Hygiene
Ensure all sushi operations across outlets meet Dubai Municipality hygiene requirements.
Lead strict food safety practices: temperature control, storage, labeling, and raw fish handling.
Maintain a clean, organized, and visually appealing sushi counter at all times.
Service & Guest Interaction
Provide a professional and calm presence during service, especially at open counters.
Handle guest requests or special sushi orders with hospitality and attentiveness.
Qualifications & Requirements
Minimum 4-6 years experience in sushi leadership roles in premium Japanese or contemporary Asian concepts.
Strong background in managing, training, and leading a sushi team.
Exceptional knife skills, raw fish handling expertise, and deep understanding of sushi fundamentals.
Ability to oversee multiple outlets and ensure consistent standards.
Strong communication, leadership, and organizational skills.
Flexible with schedule, including weekends and public holidays.
