Senior Chef - Healthy Sandwich & Kitchen Manager

Role Overview



Lead all kitchen operations with a focus on healthy sandwich preparation. Drive kitchen excellence by managing staff, controlling costs, implementing menu innovation, and ensuring high standards in nutrition and safety.

Key Responsibilities



Kitchen & Sandwich Section Leadership

Oversee daily kitchen functions, focusing on the sandwich/cold kitchen section--staff training, prep, cooking, food presentation, and maintaining consistency

Recipe Development & Healthy Sandwiches

Design nutritious sandwiches, wraps, and light meals using whole-grain bread, lean proteins, fresh produce, mindful portions, and allergen-aware ingredients

Costing & Budget Management

Track food and labor costs, manage inventory and suppliers, apply food costing methodologies, and forecast budgets to maintain profitability

Operational Excellence & Hygiene

Maintain SOPs, HACCP, and UAE food safety standards. Ensure proper portion control, waste reduction, and inventory rotation

Team Management

Hire, mentor, and schedule kitchen staff. Conduct training sessions on healthy cooking, sandwich assembly, and kitchen efficiency .

Quality Control & Reporting

Conduct daily taste checks, oversee presentation standards, monitor KPIs (waste, cost margins, safety), and prepare kitchen performance reports

Required Qualifications & Skills



Education

Culinary diploma/degree or Hospitality Management certification. Nutrition or healthy cooking qualifications are a plus

Experience

5+ years in culinary roles (e.g., Senior Sous Chef, Head Chef), with 2+ years leading sandwich or cold kitchen sections in UAE

Technical Abilities

o Proven expertise in healthy sandwich preparation (bread selection, portioning, fresh ingredients)

o Strong food costing and menu development skills

o Competence in kitchen software and MS Office for inventory and reporting

Regulatory Awareness

Thorough understanding of UAE's HACCP, Dubai Municipality food safety, and allergy management standards

Leadership & Soft Skills

Excellent in training, communication, time management, attention to detail, and motivating a kitchen team .

Preferred



Experience collaborating with nutritionists or dietitians to align menu with health goals

Certifications like HACCP

Background in wellness kitchens, meal-prep services, or high-volume sandwich sections

Pay: AED2,300.00 - AED2,800.00 per month
