We are looking for a
talented Vegan Pastry Chef
who is passionate about crafting
desserts that nourish the body and delight the senses
-- without refined sugars, dairy, or animal ingredients.
Key Responsibilities
Creative & Technical Preparation
Develop, prepare, and plate vegan desserts, pastries, and baked goods.
Create refined recipes that align with our
plant-based, gluten-free, and refined sugar-free
philosophy.
Create and maintain technical recipe cards with detailed ingredient lists, measurements, preparation steps, and cost calculations.
Ensure recipe consistency, accurate costing, and portion control across all pastry and kitchen items.
Continuously innovate new dessert ideas using superfoods, nuts, seeds, and seasonal ingredients.
Maintain consistent taste, texture, and presentation standards.
Kitchen Operations
Ensure all desserts are produced according to recipes and portion guidelines.
Oversee ingredient cost control and monitor food cost percentages to maintain profitability.
Maintain a clean, organized, and hygienic workstation.
Manage communication and orders with suppliers, ensuring timely delivery and quality of ingredients for the entire kitchen, not only desserts.
Oversee inventory and ordering for all kitchen sections, ensuring optimal stock levels, correct rotation, and minimal waste.
Minimize waste and manage production planning efficiently.
Team Collaboration
Coordinate with kitchen staff to align dessert offerings with daily menus and events.
Train and mentor kitchen team members in preparing vegan pastries and other menu items, ensuring adherence to recipes and Eco Mind standards.
Share knowledge about vegan substitutes, techniques, and flavor balancing to elevate the overall kitchen skill set.
Support cafe operations during busy hours and special events.
Share knowledge with junior kitchen team members when needed.
Quality & Compliance
Adhere to Dubai Municipality food safety regulations and Eco Mind hygiene standards.
Ensure all desserts are labeled and stored correctly.
Maintain high standards of cleanliness, consistency, and mindfulness in every detail.
Leadership & Cost Control
Maintain updated costing sheets and recipe documentation for management review.
Track ingredient usage and coordinate with management to optimize supplier selection and pricing.
Support menu development through accurate cost analysis and feasibility assessment.
Requirements
Minimum 3 years
of experience as a Pastry Chef or Baker (experience in vegan/plant-based desserts strongly preferred).
Solid understanding of
vegan substitutes
(flax eggs, aquafaba, nut butters, coconut cream, etc.).
Creativity in working with
natural sweeteners
(dates, maple, coconut sugar, etc.).
Knowledge of
gluten-free baking
is a strong plus.
Strong organizational and time-management skills.
Ability to work independently and take ownership of dessert production.
