The Marination Supervisor is responsible for supervising and managing all marination activities in the kitchen/production area to ensure consistent taste, quality, and food safety standards. The role requires strict adherence to recipes, hygiene, and QSR operational standards.
Key Responsibilities:
Oversee the preparation and marination of chicken, meat, and other food items according to company recipes and standards.
Ensure accurate measurement and mixing of marinades, spices, and seasonings.
Supervise marination staff to ensure compliance with food safety and hygiene guidelines.
Monitor marination times and storage conditions to maintain product quality and freshness.
Conduct regular checks on raw material quality and report any discrepancies to the Kitchen/Procurement team.
Ensure FIFO (First In, First Out) system is followed for all marinated products.
Train and guide team members on marination processes and safety practices.
Maintain daily marination records (batch details, expiry tracking, wastage, etc.).
Coordinate with kitchen and service teams to ensure timely availability of marinated items.
Monitor equipment and tools used in marination for cleanliness and report maintenance needs.
