Role
The Manager on Duty (MOD) / Food & Beverage is a key operational leader within Amanjena. Acting as the senior manager on duty during assigned shifts, the MOD ensures seamless resort operations while championing exceptional Food & Beverage experiences that celebrate Moroccan gastronomy, craftsmanship, and contemporary luxury service.
This role requires a culturally aware, guest-centric leader who embodies Moroccan hospitality ("art de vivre"), attention to detail, and intuitive service excellence.
Responsibilities
Food & Beverage Operations (Primary Focus)
Oversee daily operations of all F&B venues, including Arva, The Moroccan, poolside dining, lounges, in-room dining, and private dining experiences.
Ensure authentic yet refined presentation of Moroccan and international cuisine, service rituals, and beverage programs.
Partner closely with the Executive Chef to elevate culinary storytelling, local sourcing, and seasonal menu development.
Maintain a strong floor presence during peak service periods, ensuring personalized guest engagement and flawless execution.
Uphold strict compliance with Moroccan health, safety, hygiene, and food safety regulations, as well as international luxury standards.
Drive F&B revenue through curated experiences, tastings, themed evenings, and bespoke guest offerings.
Manager on Duty Responsibilities
Serve as the senior decision-maker on property during assigned shifts.
Coordinate seamlessly with Front Office, Housekeeping, Engineering, Spa, Security, and Landscaping teams.
Ensure smooth arrivals, VIP stays, special requests, and cultural or religious considerations.
Handle guest feedback, complaints, and service recovery with diplomacy and discretion.
Conduct daily resort walkthroughs, ensuring impeccable presentation of guest areas and back-of-house operations.
Guest Experience & Cultural Ambassadorship
Embody Moroccan hospitality values: warmth, generosity, discretion, and respect.
Create meaningful connections with guests through storytelling, cultural knowledge, and personalized service.
Ensure culturally sensitive service delivery, including awareness of prayer times, Ramadan operations, and local customs.
Support bespoke guest experiences such as traditional ceremonies, culinary journeys, and private celebrations.
Leadership & Team Development
Lead and inspire multicultural teams with a hands-on, visible leadership style.
Support training in luxury service standards, Moroccan hospitality etiquette, and F&B excellence.
Ensure staff presentation, grooming, and conduct align with luxury brand and cultural expectations.
Promote teamwork, pride, and accountability across all departments.
Financial & Operational Excellence
Monitor daily F&B performance, including revenue, average check, covers, labor, and cost of sales.
Ensure effective cost control, inventory management, and local supplier partnerships.
Support budgeting, forecasting, and financial reporting.
Ensure compliance with internal controls, cash handling procedures, and audit requirements.
Requirements
Qualifications & Experience
Minimum 5 years' experience in luxury hospitality, preferably within boutique resorts or riads.
Strong background in Food & Beverage operations within a high-end environment.
Experience working in Morocco or similar cultural hospitality contexts is highly desirable.
Excellent leadership, communication, and guest-relations skills.
Fluent in English and French; Arabic is a strong advantage.
