We are Maki & Ramen - a growing, Japanese-inspired dining brand known for our homemade ramen, freshly prepared sushi, and warm, attentive hospitality. As we expand into the UAE, we are bringing our passion for quality, craft, and memorable guest experiences to Dubai.

For our newest Dubai location, we are looking for an experienced Back of House team member with a background in Asian cuisine, primarily Japanese, to support the pre-opening kitchen mobilisation and contribute to the success of our first site in the region. This role requires strong kitchen fundamentals, good knife technique, and the ability to work to high standards in a fast-paced environment.

You will play an important role in maintaining kitchen standards, supporting service readiness, and helping deliver a smooth and successful international opening. Key Responsibilities

Support the pre-opening kitchen mobilisation, including kitchen set-up, preparation, training support and soft-opening services. Prepare and cook dishes in line with Asian cuisine principles, with a primary focus on Japanese food, following brand standards and recipes. Use proper knife techniques for the preparation of fish, meat and vegetables, ensuring accuracy, consistency and minimal waste. Maintain high standards of cleanliness, food safety and organisation across all kitchen areas. Work collaboratively with the wider kitchen team to ensure smooth and efficient service. Follow all food hygiene, health and safety procedures in line with company and local regulations. Assist with stock rotation, waste control and basic kitchen administration as required.

Skills & Qualifications

Previous experience working with Asian cuisine is required, with Japanese food experience

strongly preferred

. Competent knife skills and confidence in food preparation techniques. Experience in a fast-paced kitchen or high-volume hospitality environment. Strong teamwork skills with a reliable and flexible approach to work. Ability to perform well under pressure while maintaining quality and consistency. Good attention to detail and a strong work ethic. Willingness to learn, adapt and support an international brand opening.
