What You Will Do:
Supervise and coordinate all activities in the Japanese kitchen, with a focus on kaiseki preparation
Lead the culinary team in delivering high-quality, seasonal multi-course menus aligned with kaiseki principles
Support Head chef to Design and develop new kaiseki menus and seasonal offerings
Ensure proper mise en place, timely service, and consistent presentation standards
Maintain food safety and hygiene procedures according to HACCP standards
Train, mentor, and evaluate junior chefs to build a skilled and motivated team
Monitor inventory, place orders, and ensure efficient stock management
Maintain close communication with service teams to ensure smooth coordination during meal service
Conduct daily briefings and ensure kitchen readiness for all shifts
Foster a culture of excellence, respect, and continuous improvement
What You Will Bring:
Minimum 7 years of experience in Japanese fine dining, with at least 2 years in a Senior chef role
Deep knowledge of kaiseki cuisine, structure, and seasonal ingredient usage
Proven leadership and people management skills
Exceptional culinary skills, knife techniques, and plating aesthetics
Strong understanding of food cost, kitchen operations, and quality assurance
Ability to remain calm and professional under pressure
Strong communication and organizational skills
