It's time to step out of your kitchen and into ours! We are seeking for a Jr. Sous Chef with experience in Sushi. You will be managing and organizing the kitchen team to deliver consistent food quality aimed at creating amazing experiences for customers. In this role, you will be coordinating and supervising food and supplies, budgeting expenses, and preparing menus. Responsibilities

  • Assist Executive Chef / Head Chef in the supervision of all colleagues engaged in the kitchen and in controlling food cost.
  • Make daily production lists for his/her section in absence of the Head Chef.
  • Check daily food preparation, individual costs, quality, quantity inventories and portion control.
  • Ensure freshness of products used during food preparation are high quality/ meet the company requirements.
  • Check and assist in food preparation to ensure that the presentation as well as quality of the food is in accordance with the company standards. Observe the cooking process and taste the food to make sure the standards have been met.
  • Control costs by minimizing spoilage, wastage, following the correct storage procedure and implementing strict portion control as per company policies.
  • Minimize wastage and mark-outs, by controlling and constantly reviewing the par levels, according to business needs.
  • Understand par level system in his section, being able to analyse it and adjust it base on the business needs.
  • Communicate with the Team regarding any events, catering, sales forecasting to ensure food par levels are correct.
  • To maintain cleanliness in all assigned areas, including refrigerators and freezers.
  • Monitor the Maintenance, Serviceability and Cleaning of all Back of House.
  • Conducts training and thorough briefing on the correct usage of kitchen equipment and machinery and to check that this is carried out in the correct manner by all kitchen colleagues.
  • Reports any broken equipment; ensures all equipment is used in the correct way as per company's standard.
  • Ensures all the Dubai municipality and HACCP regulations are followed and documentation is up to date as per requirement, readiness for all hygiene audit at any given point of time.
  • Ensure that expiry policy is being strictly followed.
  • Establish and maintain effective employee relations.
  • Supports employees during the onboarding period and induction sessions. Assists and trains new kitchen staff.
  • Perform duties common to all Jr. Sous Chef and other duties as maybe assigned.
Qualifications
  • Bachelor's Degree or Diploma in Culinary or similar field
  • At least 3+ years of experience in similar role
  • Strong knowledge of cooking methods, kitchen equipment, and best practices
  • Resourceful, forward-thinking, innovative, and committed
  • Comprehensive knowledge of menu offerings as well food & safety regulation
  • Outstanding communication and leadership skills
  • Up-to date with culinary trends and optimized kitchen processes
  • Creative approach to the production of high-quality food.
Job Type: Full-time Salary: From AED6,500.00 per month Ability to commute/relocate:
  • Dubai: Reliably commute or planning to relocate before starting work (Required)
