Role Summary
voco Dubai is hiring a Hygiene Officer to oversee food safety and hygiene standards across all kitchen and food service operations. This role ensures compliance with local regulations, international guidelines, and brand standards, safeguarding both guest and staff wellbeing. You will be responsible for monitoring, auditing, training, and implementing corrective actions to maintain the highest levels of hygiene and food safety.

What You'll Do

• Implement and maintain food safety management systems (FSMS) in compliance with local hygiene regulations
• Maintain records of hygiene forms, checks, audits, and corrective action reports
• Conduct regular inspections of kitchens, storage, and food transport equipment to ensure hygiene standards are met
• Verify food storage practices including covering, labeling, and FIFO rotation procedures
• Monitor refrigeration and freezer temperatures to ensure compliance with safety requirements
• Liaise with pest control providers and housekeeping to address pest-related issues and evaluate performance
• Coordinate microbial food testing with suppliers, kitchens, and labs when needed
• Conduct hygiene audits of staff, provide feedback, and implement corrective actions
• Train all food handlers on hygiene and food safety standards; provide refresher courses as required
• Work closely with the executive chef, purchasing, and stewarding teams to ensure food safety compliance across operations

Ideal Profile

• Previous experience as a Hygiene Officer or similar role in a 5-star hotel or hospitality environment
• Strong understanding of HACCP, FSMS, and food hygiene standards
• Excellent organizational skills with the ability to work in a fast-paced environment
• Ability to lead training sessions and engage a diverse team of food handlers and kitchen staff
• Strong decision-making, inspection, and problem-solving skills
• Good communication skills in English; additional languages are a plus
