Head Waiter / Maitre d'Hotel
Reports To: Supervisor / Restaurant Manager
Supervises: Commi Waiters, Runners
Overview: The Head Waiter is the captain of the dining room floor, directing the service team to execute flawless, synchronized service. They are the primary point of contact for VIP guests and manage the pacing of the meal.
Key Responsibilities:

  • Lead the service team on the floor, assigning sections and delegating tasks.
  • Personally welcome and attend to VIP guests, regulars, and special occasions.
  • Present menus, articulate daily features, and answer detailed questions about dishes and preparation.
  • Take wine orders and execute tableside service (e.g., decanting, recommendations).
  • Ensure all Commi Waiters and Runners are performing to standard.
  • Monitor table statuses and coordinate with the kitchen expeditor on timing.
  • Perform final quality checks on dishes before they reach the guest.
  • Handle payment for high-profile tables and resolve minor service issues.
  • Conduct side work, inventory, and maintain service stations to a high standard.
Requirements:
  • Extensive experience as a Senior Waiter in fine dining.
  • Expert knowledge of food, wine, and spirits. Sommelier certification is a strong plus.
  • Impeccable presentation, demeanor, and command of service etiquette.
  • Natural leadership ability and clear, calm communication.
  • Ability to "read" the room and anticipate guest needs.
