TASKS, DUTIES AND RESPONSIBILITIES OF F&B CAPTAIN :

PROVIDE EFFICIENT, PROMPT, TROUBLEFREE, AND COURTEOUS SERVICE

Provides efficient, prompt, trouble free, and courteous service by bussing, serving and setting tables

Accurately records, pre-checks, and picks up all food and beverage orders

Serves guests their food and beverage promptly and courteously

Sets tables as needed prior to guest arrival

Ensures that the working area and station are stocked with \xe2\x80\x9cmise-en-place\xe2\x80\x9d and kept clean and tidy at all times

Ensures the smooth running of the assigned station at all times

Maintains a thorough working knowledge of food and beverage menus, to be able to advise guests on selection and promote additional sales accordingly

Promotes additional sales by taking opportunities to up-sell, in a manner that is professional and courteous

Is familiar with all equipment relating to the banqueting function (e.g. TV, projector,

VCR etc.)

Makes clear orders to kitchen production, and bar regarding beverages; registers orders according to hotel procedures

Confers with Banquet Manager regarding last minute arrangements to co-ordinate with kitchen production

Checks the restaurant reservations list frequently during the shift

ROOM SERVICE

Works pro-actively to minimize complaints from guests

Maintains clean and orderly work area in accordance with the hotel\xe2\x80\x99s and corporate standards

Monitors cleanliness of hallways; ensures that guests are relieved of dirty dishes promptly

Make requisitions of room service supplies

Handles guest complaints tactfully

Actively pushes high profit food and beverage items if given the possibility

Keeps silver, glass, porcelain etc. clean and in good working order

Ensures readiness and compliance among all staff

Checks rooming and arrival lists to be aware of VIP guests, and uses guest names when appropriate

SECURITY, HEALTH AND SAFETY

Ensures that own cash is secure at all times

Ensures all discrepancies in own cash are declared to the Supervisor and Controller

Maintains high confidentiality in regards to guest privacy

Notifies the Supervisor and Executive Housekeeper regarding lost and found objects

Reports all potential and real hazards appropriately

Fully understands the hotel\xe2\x80\x99s fire, emergency, and bomb procedures

Follows emergency procedures to provide for the security and safety of guests and employees

Works in a safe manner that does not harm or injure self or others

Supports a safe hotel by applying hotel regulations, and adhering to existing laws and regulations

Anticipates possible and probable hazards and conditions and notifies the Supervisor

Maintains the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct

MISCELLANEOUS

Refers guests to Supervisor regarding requests for information about the hotel and its surroundings

Stays current with activities in the hotel by reviewing the communication log book each shift; updates log book for next shift

Accepts flexible work schedule necessary for uninterrupted service to hotel guests
