Job Description

Job Summary:
The Demi Chef de Partie (DCDP) is a skilled cook responsible for assisting the Chef de Partie in managing a specific section of the kitchen. They ensure high-quality food preparation, maintain kitchen standards, and support smooth kitchen operations while adhering to hygiene and safety regulations.
Key Responsibilities:
Food Preparation & Cooking:

  • Assist in preparing, cooking, and presenting dishes according to the restaurant's standards.
  • Ensure consistency in taste, portion size, and plating.
  • Follow recipes, portion controls, and presentation specifications.
Section Management:
  • Oversee a specific station (e.g., sauces, grill, pastry, cold kitchen) under the guidance of the Chef de Partie.
  • Ensure all mise-en-place is ready before service.
  • Monitor stock levels and report shortages to superiors.
Hygiene & Safety:
  • Maintain cleanliness and organization of the assigned section.
  • Follow food safety standards (HACCP) and sanitation regulations.
  • Ensure proper storage and labeling of food items.
Teamwork & Communication:
  • Work closely with other kitchen staff to ensure smooth service.
  • Assist junior staff (Commis Chefs) with training and guidance.
  • Communicate effectively with the Chef de Partie and Sous Chef.
Quality Control:
  • Check food quality before serving and ensure consistency.
  • Report any issues with ingredients or equipment immediately.
