Job Description

• Position is based in Al Mirfa, Abu Dhabi
• In absence of CDP, conduct shift briefings to ensure hotel activities and operational requirements are known.
• Support the Chef de Partie or Sous Chef in the daily operation and work
• Work according to the menu specifications by the Chef de Partie
• Keep work area at all times in hygienic conditions according to the rules set by the hotel
• Control food stock and food cost in his section
• Prepare the daily mis-en-place and food production in different sections of the main kitchen or satellites
• Follow the instructions and recommendations from the immediate superiors to complete the daily tasks
• Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques
• Instruct and lead subordinates through their daily requirements in food preparation and actively take part in set up of buffets and special functions
• Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control
• Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.
• Clean and re-set their working area.
• Conducting on the job training in accordance with the departmental standards and procedures and maintaining a record of progress for each staff member.
• Work with superior in the preparation and management of the department's budget and is aware of financial targets.
• Work with Superior and Human Resource to ensure the departmental performance of the team is productive.
• Recycle where-ever possible and enforce cost saving measures to staff.
• Maintains established departmental policies and procedures, objectives, quality assurance program, and safety standards
• Abides by the HACCP standards for freshness, proper handling, serving, and storage temperatures.
• Log security incidents and accidents in accordance with hotel requirements.

Job Type: Full-time Salary: AED2,200.00 - AED2,500.00 per month Ability to commute/relocate:

• Abu Dhabi: Reliably commute or planning to relocate before starting work (Required)

Education:

• High school or equivalent (Preferred)

Experience:

• Commis I: 6 years (Required)
• 4-5 Star Hotel: 6 years (Required)
• Continental Cuisine: 5 years (Required)
• Hospitality: 5 years (Preferred)

Language:

• English (Preferred)
