As a Demi Chef de Partie, it is your responsibility to handle the daily food preparation as well as the tasks assigned to satisfy the established standards and characteristics.
Assist the Chef de Partie or Junior Sous Chef in their daily tasks and activities. Work in accordance with the menu guidelines provided by the Chef de Partie. In accordance with hotel standards, keep the work area clean at all times. In his department, manage food costs and inventory. Set up several areas of the main kitchen or other outlets for the daily mis-en-place and food manufacturing. Assist in putting up buffets and big events, and mentor and guide subordinates through daily food preparation responsibilities. Coordinate requirements, cleanliness, waste reduction, and cost control with other departments.
