Job Description

Summary: As a Food & Beverage Cost Controller, you are responsible to liaise closely with the Food & Beverage Department on various operational and cost-related issues. Key responsibilities:

  • Control the Outlets in terms of wastage, pilferage, and efficiency.
  • Able to effectively control the Cost. Prepare variance analysis and communicate with relevant parties(supplier).
  • Update and maintain receipts in the systems.
  • Check and verify voids in the POS systems.
  • Check and verify discounts, complimentary, staff meals & discounts on the POS systems if any. Check and verify all settlements done on the POS system.
  • Check and verify for any lost postings.
  • Check the cost of sales in all outlets and ensure that the costs are within budget.
  • Check the menu pricing on the POS systems and ensure the correct prices are loaded.
  • Continuously study weaknesses in each outlet control implemented and provide suggestions for improvements.
  • Responsible for preparing daily Reports and distributing them to management.
  • Responsible for monthly Reports and distribution to management.
  • Responsible for surprise spot checks at all outlets.
  • Check the daily revenues report submitted by the income audit for the accuracy of covers and average checks.
  • Prepare the daily and monthly cost report department in relation to the cost of sales.
  • Participate in stock taking at the restaurants.
  • Check and ensure that no item is issued out from the store without requisition or approval from the respective department head.
  • Coordinate with restaurant management and finance to sort out issues pertaining.
  • Update selling prices in POS as per the instruction from authorized persons.
  • Responsible to maintain the Menu Pricing, Consumption, and POS systems.
  • Any other tasks as and when required by the management (related to monitoring all company assets in each outlet).
Requirements:
  • VIP amenities and their respective conversion recipes
  • Garbage cans and their contents
  • Par stocks in outlets and stockrooms
  • Inventory on shelves compared with inventory recorded in the computer
  • Market survey on food items being purchased
  • The quality of Food & Beverage items being received to ensure that they match purchase specifications
  • Inventory turnover
  • Beverage handling procedures and the use of outlet labels
  • Pouring brand consumption
  • To maintain organized files of all pertinent cost audit Operating Equipment and FF&E records.
  • To be thoroughly familiar with the duties and responsibilities of the Materials Receiving and Storing process and be able to train the ambassador up to the standards required.
  • To assist in the training Materials Management to ambassadors as part of the effort to build an efficient team and to take an active interest in their individual development and welfare.
  • To assist in carrying out quarterly, bi-yearly, yearly inventory of operating equipment.
  • To carry out any other reasonable duties as assigned by the Director of Finance or Assistant Financial Controller.
