Commis I - Kitchen
Job Summary:
The Commis I is an entry-level chef who has gained some foundational experience and is now focused on developing their skills and efficiency. They work under the guidance of the Demi Chef de Partie and Chef de Partie, taking on more responsibility than a Commis II. The primary goal is to master the basic tasks of a specific section and begin to understand the flow of service.
Key Responsibilities:

  • Food Preparation & Cooking:
  • Prepare a wider range of ingredients and more complex mis-en-place for a specific section.
  • Cook and finish simpler dishes independently during service, under supervision.
  • Assist the DCDP and CDP in preparing and finishing more complex menu items.
  • Start to develop a deeper understanding of flavor profiles and plate presentation.
  • Section Support:
  • Work consistently in one or two sections to build proficiency and speed.
  • Ensure the section is kept clean, tidy, and well-stocked during service.
  • Learn and adhere to all recipes, portion controls, and presentation standards.
  • Learning & Development:
  • Actively seek feedback and learn from senior chefs.
  • Begin to take on more responsibility, such as monitoring stock levels and reporting low supplies.
  • Develop time management skills to handle multiple tasks during busy periods.
  • Compliance:
  • Follow all company policies and procedures, especially regarding health, safety, and food hygiene.
  • Handle and store food correctly to ensure the highest quality and safety.
Reporting Line: Reports directly to the Demi Chef de Partie and Chef de Partie of their assigned section.
Experience & Qualifications:
  • Typically 1-2 years of experience in a professional kitchen, often as a Commis II or Apprentice.
  • Good foundational knowledge of cooking techniques and kitchen equipment.
  • Ability to follow instructions precisely and work as part of a team.
  • Demonstrates a strong desire to learn and progress in their culinary career.
  • Good organizational skills and the ability to work cleanly.
